Canon Félix Kir, a Résistance hero and later mayor of Dijon, gave his name to this simple wine “cocktail”, traditionally made with the rustic Burgundian variety called aligoté. When champagne is used instead of white wine, the drink is called a kir royale. Americans tend to stint on the amount of crème de cassis, to yield a faint pink drink; it should properly be a dark rosé hue. Add a generous 2 tbsp. crème de cassis to a 6 oz. cold dry white wine (preferably aligoté, bourgogne blanc, or pouilly-fuissé). Serves 1.
