But recent research has found no convincing evidence that nitrite and nitrate pose a cancer risk.”

It is precursor of nitrite which can react with amines to form nitrosamines (chemical carcinogens) both in food and in the body, particularly GI tract. This study aimed to evaluate the changes in nitrate contents of mustard green during and after pickling process, home style and commercially. A batch of fresh mustard green (100 kg) was divided into 10 portions, 10 kg each, Home pickling and commercially pickling with canning processes were made in the pilot plant. Samples of stem, leave, and brine were taken at various steps of pickling and after storage of 0 day, 1, 2, and 3 months. Nitrate and nitrite contents were determined spectrophotometrically. The results indicate that nitrate levels changed significantly. In stems, the levels decreased 69-90% from those in fresh vegetable, while the levels in leaves decreased in a lesser extend, and the levels in brine increased considerably. From this study, it can be concluded that pickling can reduce the content of nitrate in mustard green and in turn reduce the exposure to nitrate from eating mustard green, if the pickling brine is not consumed. Therefore it may reduce the risk of exposure to nitrosamines, endogeniously.
