Cabbage Cooked with Bean Curd

Ingredients

  • 3 lg Shiitake mushrooms
  • 1/2 ts Salt
  • 2 ea Cakes medium tofu
  • 2 ts Soy sauce
  • 1 lb Cabbage, sliced
  • 1 ts Mirin sauce
  • 3 tb Oil

Directions

  1. Soak mushrooms in 3/4 c hot water for 1/2 hour.
  2. Put tofu onto a paper towel & leave to drain for 30 minutes.

  1. Remove mushrooms from water, reserve liquid.
  2. Cut off & discard stems.
  3. Slice caps into 1/4" wide strips.

Directions

  1. Heat oil in an 8" skillet.
  2. When hot, put in cabbage & mushrooms.
  3. Stir & fry for 1 minute, till cabbage wilts.
  4. Reduce heat to medium.
  5. Crumble tofu & it to the skillet.
  6. Add salt, soy sauce & mirin.
  7. Stir & fry for another 5 minutes.
