Hummus Bi Tahini

Ingredients

  • 19 oz Can chickpeas
  • 1/2 ts Salt
  • 1 ts Baking soda
  • 2 tb Cold water
  • 3 tb Tahini
  • 1 tb Pine nuts
  • 1 ea Garlic clove, chopped
  • 1 tb Olive oil
  • Juice of 1 1/2 lemons

Directions

  1. Combine chickpeas with their juice with baking soda & bring to a boil.
  2. Immediately remove from heat, drain & rinse thoroughly.
  3. In a food processor, combine chickpeas, tahini, garlic, lemon juice, salt & 1 Tb of water.
  4. Blend till creamy.
  5. Add rest of the water if mixture apears too thick.
  6. Refrigerate.
  7. Heat olive oil & fry pine nuts till golden brown.
  8. When ready to serve, sprinkle over hummus.
  9. Serve cold with pita bread.
