Lima Bean Soup

Ingredients

  • 1 lb Frozen lima beans
  • 1 ds Basil
  • 3 1/2 c Sliced carrots
  • 1 ds Black pepper
  • 3 tb Olive oil
  • 1 ds Cayenne
  • 5 ea Green onions, finely chopped
  • 3/4 c Soy sauce
  • 5 c Chopped mushrooms

Directions

  1. Cook lima beans in water according to packet instructions.
  2. Steam carrots till tender.
  3. Drain reserving cooking water.

Directions

  1. Heat oil in a skillet & saute green onions & mushrooms until tender.
  2. Add spices & saute for a further 1 minute.

  1. Combine all ingredients (except milk) along with 1 cup of bean & carrot water.
  2. Using a blender, blend in batches till smooth.
  3. Pour mixture into a large soup pot.
  4. Add milk.
  5. Cook slowly for 15 to 20 minutes.
