Madeira-Truffle Butter
RUB THIS butter under the bird's skin when making the roast turkey, or slather it on hot stamed or bake potatoes. Put 6 tbsp. softened butter into a medium bowl and whisk until fluffy. Gradually add 2 tbsp. madeira, whisking until completely incorporated. Add 1 small finely chopped cleaned fresh black winter truffle, season to taste with salt, and stir well. Butter will keep covered and refrigerated for up to 1 week or frozen for up to 1 month. Make ½ cup.
