were incorporated into three types of bakery products to test their
functional properties. Addition of 4% of small size (>100 mesh)
fibers in butter cake yielded greater volume and no significant
change in sensory quality (p>0.05). Butter cookies with 1% of
large size (<60 mesh) fibers slightly increased in spread ratio
and yielded a softer texture. Incorporation of 3% of medium size
(60-100 mesh) fibers in cake doughnuts showed that only SHDF2
reduced the oil uptake during deep fat frying (10.5% less than
control formula) and the sensory quality of the doughnuts was not
different from the control formula (p>0.05).

Lenovo Soybean known for its protein content is being recognized
as having potential roles in the prevention and treatment of
chronic diseases, most notably cancers and heart disease. Studies
on possible inhibitory effects of soymilk, soy-yogurt, and tofu
against mutagenicity of any genotoxins are required to support such
hypothesis. The method used in this study was SMART. Three-day old
trans-heterozygous Drosophila larvae obtained from the
virgin ORR;flr3 females and mwh males were
transferred to test tubes containing a soybean sample and urethane
(URE) for simultaneous feeding study; while in the prefed study,
the virgin females and males were mated on a medium containing
sample to obtain three-day old larvae which were brought up on a
regular medium containing URE. After metamorphosis, the adult flies
bearing the marker trans-heterozygous (mwh+/+flr3) indicated with
round wings were examined for the mutant wing spots. The
frequencies of total spots from flies fed URE (2,200, 4,500, and
6,700 ppm) with tofu (2 g/tube), soymilk (2 ml/tube), and
soy-yogurt (2 g/tube) were less than that of URE treated groups.
Percent inhibitions of induced wing spots in prefed studies were
lower than those of simultaneous administration studies. The
inhibition calculated as percents reduction according to the
concurrent running standard URE (2200 6700 ppm) in simultaneous
administration studies of tofu, soymilk and soy-yogurt are 64-77%,
67-79% and 43-71% respectively; while those of prefed studies are
8-73%, 46-66% and 31-48%, respectively. The data indicated that
tofu, soymilk, and soy-yogurt decreased the mutagenicity induced by
URE. However, all samples could not reduce the mutage nicity of URE
to be the values of sample control groups.

Software Colon cancer is the second most common
diet dependent cancer in Western
industrialized countries. At the moment, there is no direct
evidence that yogurt can inhibit carcinogenesis in human. Most of
the data postulating the protective effect of yogurt are based on
animal studies. The protective effects of yogurt A (fermented with
a mixture of Streptococcus thermophilus TUA196L and
Lactobacillus acidophilus ATCC4356), yogurt B (fermented
with a mixture of Streptococcus thermophilus TUA196L and
Lactobacillus bulgaricus TUA093L), milk, or yogurt cultures
(Streptococcus thermophilus TUA196L, Lactobacillus
acidophilus ATCC4356 and Lactobacillus bulgaricus
TUA093L) against the somatic mutation and recombination induced by
cyclophosphamide (2.79 mg/tube) or urethane (4.45 mg/tube) in the
improved high bioactivation (IHB) cross of the wing spot test in
the Drosophila melanogaster were evaluated. Larvae
trans-heterozygous (3-day-old) for the wing spot cells markers
mwh (multiple wing hairs) and flr3 (flare)
were fed until pupation on medium containing a genotoxic or the
combination genotoxin and reconstituted milk (2 ml/tube), each of
yogurt (2 g/tube) or each yogurt culture (107,
108 or 109 cells). Subsequently, the wings of
the resulting adult flies were analyzed for the frequencies and
size of single and twin spots. The results showed that each yogurt,
milk and yogurt cultures had significant antimutagenic effect on
both cyclophosphamide and urethane. The antimutagenic effect of
yogurts brought the activity of the two mutagens closed to the
effect produced in water control group. Hypotheses were proposed
that 1) both milk and yogurt decreased the availability of the
genotoxic agents to the imaginal disc cells of larva by scavenging
activity of milk or yogurt component, 2) binding of mutagens to
cell wall of the yogurt cultures should decrease the mutagenicity
of both standard mutagens.

Desktop Computers The effect of nitrate, ascorbic acid, insoluble and soluble
dietary fibers from boiled vegetables on the levels of nitrate and
nitrite in urine and saliva were studied. The levels of nitrate and
nitrite in urine and saliva of 10 subjects, non-smoker and healthy
adults, were studied after ingestion of boiled waxgourd, cabbage,
Chinese cabbage, cauliflower, Chinese kale and Chinese white
cabbage. Each subject ate 6 kinds of boiled vegetables on separate
days. The saliva and urine were collected before and ? 1, 1 ?, 2,3
and 4 hours after ingestion for nitrate and nitrite analysis. It
was found that salivary nitrate and nitrite levels of subjects
receiving high nitrate intake were higher than those of low nitrate
intake. After ingestion of boiled waxgourd, salivary nitrite and
urinary nitrate levels decreased with the amount of insoluble
dietary fiber intake. At 2
